Ethiopian coffees most commonly found are Ethiopian Harrar and Ethiopian Sidamo, but the finest coffee Ethiopia produces is the lesser known Ethiopian Yirgacheffe (pronounced "Yer-ga-shef") coffee bean. Ethiopian Yirgacheffe offers a uniquely intense, floral taste with a full body.
Coffee beans from Ethiopia are easily identified because they are smaller than most other coffee beans. Ethiopian coffee is processed both by wet-processing and dry-processing, but our Ethiopian Yirgacheffe beans are processed only by wet-processing. Wet-processing is a method of taking the coffee cherry down to the green coffee bean through a fermentation process by soaking in tanks for 3 days. This method allows the coffee bean to retain more of its floral taste and high acidity level.
